Homemade Pita Chips. These could possibly be one of the easiest and most delicious things to make. Another added plus is that they’re healthier than the pita chips you buy in the store, and in my opinion, taste better.
Just cut up flour tortillas, paint with extra virgin olive oil, add desired seasonings, and bake in the oven for a few minutes at 350.

I had leftover chick peas in the fridge so I decided to make hummus. My recipe was sort of made up on the spot, so it is a little different than traditional hummus. I also had no tahini so I substituted. It turned out really good.
- 1 can chick peas, drained
- Juice of 1 lemon
- 3 cloves of garlic, peeled
- 1 tbsp sesame oil (tahini substitute)
- 1/4 cup olive oil
- 4 tbsp Parmesan cheese
- Salt to taste
Blend together. Serve with veggies, crackers, pitas or whatever else you’d like. Dip, spread and enjoy!
Potato Veggie Pancakes
These are easy and quick, full of fresh, healthy vegetables, and use up leftover mashed potatoes from last nights dinner. More importantly, they’re crispy and yummadelicious.
I used some squash from the garden in these vegetable pancakes. You can use carrots, squash, potatoes, kale, or any veggies you have on hand.
To make these: In a mixing bowl, combine 1 shredded carrot, a chopped shallot, a couple of small grated squashes, and a grated yukon gold potato.( I first grated the potato into a colander and rinsed it to remove some of the starch) Add 2 eggs, 1 tsp flour, and salt and pepper & appx 1 or 2 cups leftover mashed potatoes. If you don’t have any leftover mashed potatoes, just leave it out, these still come out pretty awesome.
Fry them in a little bit of oil, cook for a few minutes on each side, & drain on paper towels. Serve with fresh fruit and plain Greek style yogurt.
